Seattle, Wash. — Holland America Line is expanding its Morimoto By Sea dining experience with a new specialty sushi bar available on five ships in the fleet. This unique venue features a menu by the cruise line's Global Fresh Fish Ambassador, Chef Masaharu Morimoto, offering a selection of his signature sushi, sashimi, rolls and smaller dishes. The Morimoto by Sea sushi bar is in addition to the existing Morimoto By Sea pop-up experience as well as the stand-alone specialty restaurant on Nieuw Amsterdam.
An intimate dining venue, the Morimoto By Sea sushi bar will seat 12 guests, with additional table seating in the surrounding area on Rotterdam, Koningsdam and Nieuw Statendam. Eurodam and Nieuw Amsterdam will feature a small counter for sushi preparation with seating in the surrounding area. Guests can look forward to experiencing this premium sushi bar as it begins rolling out aboard Rotterdam, Koningsdam, Nieuw Statendam, Eurodam and Nieuw Amsterdam from March through June 2025, respectively. Those with existing bookings on these Holland America Line ships can take advantage of pre-cruise reservations to experience Morimoto By Sea.
“With Chef Morimoto's knowledge and expertise in the sushi world, it made sense for him to expand beyond his Morimoto By Sea restaurant and develop a specialized sushi bar featuring his signature style and flavors,” said Michael Stendebach, vice president of food, beverage and rooms division for Holland America Line. “We're excited to extend our fresh fish options and give our guests access to another specialty venue with cuisine by such a renowned chef.”

- Shrimp Tempura: California roll, tempura shrimp and gochujang aioli
- Lobster Tempura: tempura lobster, avocado, romaine lettuce, tobiko, cucumber and scallion
- Tako Yaki: tempura octopus, cabbage, tonkatsu sauce, mayo and bonito flakes
- Aburi Salmon: salmon avocado roll and spicy mayo, torched
- California: snow crab, cucumber and avocado
- Spicy Tuna: tuna, scallion and spicy sauce

Morimoto By Sea is part of Holland America Line's Global Fresh Fish program that brings locally sourced fresh fish from port to plate in less than 48 hours — offering more than 80 varieties of fresh fish from across a worldwide network. In addition to the Morimoto By Sea sushi bar, Holland America Line ships feature Chef Morimoto's first floating restaurant, Morimoto By Sea. The venue is a stand-alone restaurant on Nieuw Amsterdam and a pop-up experience at least once per cruise on the remainder of the ships in the fleet.
Morimoto By Sea sushi bar, which will be located in the former Nami Sushi venue, is an a la carte menu offered for a surcharge. Reservations for the venue can be made pre-cruise or once aboard the ship.

About Fresh Fish Ambassador Chef Masaharu Morimoto
Chef Masaharu Morimoto — known to millions as the star of Iron Chef and Iron Chef America and now executive producer and head judge for Roku's Sushi Master — has garnered critical and popular acclaim for his seamless integration of Western and Japanese ingredients. In 2001, Chef Morimoto opened his first restaurant in Philadelphia, which was later followed by restaurants in New York, Napa, Honolulu, Boca Raton, Mumbai, Mexico City, Tokyo, and Maui.
